  • 5 cups white flour

  • 2 tbs yeast

  • warm water approx 1/4 pint

  • Filling Ingredients:
    3 cups dried mushrooms

  • 500g lean pork mince

  • 6-8 spring onions

  • 4 slices ginger

  • 1 tbs oyster sauce

  • 1 tbs soy sauce

  • 1 tsp pure sesame oil

  • 2 tsp olive oil (cooking oil of choice)

  • 2 tsp chicken seasoning

Directions

  • soak dried mushrooms for 1/2 hour
  • Add yeast to flour, gradually add warm water
  • once combined cover with a cloth and leave for 4/5 hours
  • strain and rinse mushrooms, squeeze out excess water
  • dice mushroom
  • add mince to bowl with water 1/4 pint
  • add 13 spice
  • add ginger
  • add pure sesame oil
  • add olive oil
  • add mushroom
  • add spring onion
  • chicken seasoning
  • add more oil if needed
  • keep bringing together whilst adding
  • Dumpling Wrappers:
    take risen dough need it with a little flour
  • cut in half set one aside make the other into a ring then cut into small balls
  • make balls into 3-inch discs with rolling pin
  • put filling into dough fold twist and seal the end
  • place damp gauze into steamer
  • place dumplings in steamer and steam for 45 – 60 minutes
