Carrot Cake Recipe

Ingredients

  • 1/4 pint sunflower oil

  • 40z soft light brown sugar

  • 2 eggs

  • 3oz golden syrup

  • 60z wholemeal self-raising flower

  • 1oz desicrated coconut

  • 3oz sultanas

  • 7oz finley grated carrots

  • 1 tsp bicarbonate of soda

  • 1/2 tsp ground ginger

  • 1/2 tsp ground allspice

  • 1 tsp ground cinnamon

  • Topping

  • 2 tsp fine cut orange marmalade (warm)

  • 5oz cream cheese

  • 2 fl oz coconut cream

  • 1 and 1/2oz icing sugar

  • ground nutmeg or cinnamon(for top dust)

Directions

  • Prehea the oven 325f
  • greece your baking tray
  • ina large mixing bowl add, sunflower oil, sugar, eggs, and gloden syrup and mix well
  • pour the mix into your tin and bake for (round tin 45 min) square(30min)
  • when the cake is nicely browned spingy to touch remove from oven and let rest for 10 min
  • make your topping
  • warm the marmalade (it will stir and mix better)
  • add coconut cream, icing sugar and cream cheese, mix well
  • you can pour the icing over and let it run off(see video), or let the icing set for a few minutes in the fridge and spread it on
  • you can garnish this with nutmeg, cinnamon, some icing decoration or even nuts like almonds or walnuts.
