– 200g shiitake mushrooms, fresh

– 2 large carrots, julienned

– 1 large onion, thinly sliced

– 3 cloves garlic, minced

– 1-inch ginger, grated

– 2 tablespoons soy sauce

– 1 tablespoon oyster sauce

– 1 tablespoon sesame oil

– 2 tablespoons vegetable oil

– Salt and pepper to taste

– Fresh cilantro and sesame seeds for garnish

1. Prep the Ingredients:

   – Clean and slice the shiitake mushrooms, ensuring they are of uniform size.

   – Julienne the carrots for a consistent texture.

   – Thinly slice the onion, mince the garlic and grate the ginger.

2. Marinate the Mushrooms:

   – In a bowl, combine the sliced shiitake mushrooms with 1 tablespoon of soy sauce and let them marinate for at least 15 minutes. This allows the mushrooms to absorb the flavors.

3. Heat the Wok:

   – Place a wok or large skillet over high heat. Add 2 tablespoons of vegetable oil and let it heat until shimmering.

4. Sauté Aromatics:

   – Add minced garlic and grated ginger to the hot oil. Stir-fry for 30 seconds until fragrant but not browned.

5. Stir-Fry Mushrooms:

   – Toss in the marinated shiitake mushrooms. Stir-fry for 2-3 minutes until they are golden brown and have a slightly crisp texture.

6. Add Carrots and Onions:

   – Introduce the julienned carrots and sliced onions to the wok. Stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.

7. Season the Stir-Fry:

   – Pour in the remaining soy sauce, oyster sauce, and sesame oil. Season with salt and pepper to taste. Toss the ingredients to coat evenly.

8. Simmer for Depth:

   – Reduce the heat to medium and let the stir-fry simmer for another 2-3 minutes. This allows the flavors to meld, creating a depth of taste.

9. Check for Doneness:

   – Taste a piece of carrot and mushroom to ensure they are cooked to your liking. Adjust the seasoning if needed.

10. Garnish and Serve:

    – Transfer the stir-fry to a serving platter. Garnish with fresh cilantro and a sprinkle of sesame seeds for a touch of elegance.
