  • -250g chestnut mushrooms

  • -3-4 cloves garlic

  • -½ a large onion

  • -1 bell pepper(red)

  • -½ tsp of 13-spice seasoning

  • – 3 tablespoons olive oil

  • – 3 teaspoons oyster sauce

  • – 3 teaspoons seasoned soy

  • – 2 teaspoons dark soy sauce

  • – 2 teaspoons chicken seasoning

  • – 1 teaspoon sugar

  • – ½-1 teaspoon sesame oil

Directions

  • **Marinate the Chicken:**
       – Add sliced chicken with 2 teaspoons of dark soy sauce, Mix well, marinate for 15 – 60 minutes.
  • **Onion, pepper, garlic, and mushrooms:**
       – Prepare, Chop up onion, pepper, garlic, and mushrooms
  • **Prepare the sauce**
     – Mix 3 teaspoons of oyster sauce, and 2 teaspoons of seasoned soy sauce, add a little water, and Set aside.
  •  **Stir-Fry the Chicken:**
       – Preheat 1 tbs of olive oil. Add the marinated chicken until no longer pink. Remove the chicken from the wok and set it aside.
  • **Add Mushrooms:**
     – In the same wok, add another tsp of oil if needed. Add mushrooms, cook until sealed.
  • 6. **Add Onion :**
       – Remove the onions from the wok and place wok back on the heat. Add onions start cooking add half a teaspoon of the 13 spice seasoning and a pinch of your prepared garlic.
  • **Combine Pepper:**
       – Combine chopped pepper, add half your oyster sauce mix, cook your onions and peppers until sealed.
  •  **Combine Chicken And Mushrooms:**
       – Re-introduce your chicken and mushrooms with the onions and peppers, add your oyster sauce mix, mix well, and allow to simmer for 2- 3 minutes
  • **Stir and Simmer:**
       – Lower the heat to medium and let the dish simmer for about 2-3 minutes, Add your chopped garlic and mix well, sprinkle on a tsp of sugar, and add 2 tsp of chicken seasoning.
  •  **Finishing:**
    – Simmer for a further 2 minutes add a tsp of blended sesame oil, make sure its well mixed.
  •  **Adjust Seasoning:**
       – Taste the dish and adjust the seasoning if needed. You can add more soy sauce or black pepper according to your preference.
  • **Garnish and Serve:**

– ½-1 teaspoon sesame oil
