- soak dried mushrooms for 1/2 hour
- Add yeast to flour, gradually add warm water
- once combined cover with a cloth and leave for 4/5 hours
- strain and rinse mushrooms, squeeze out excess water
- dice mushroom
- add mince to bowl with water 1/4 pint
- add 13 spice
- add ginger
- add pure sesame oil
- add olive oil
- add mushroom
- add spring onion
- chicken seasoning
- add more oil if needed
- keep bringing together whilst adding
- Dumpling Wrappers:
take risen dough need it with a little flour - cut in half set one aside make the other into a ring then cut into small balls
- make balls into 3-inch discs with rolling pin
- put filling into dough fold twist and seal the end
- place damp gauze into steamer
- place dumplings in steamer and steam for 45 – 60 minutes
