Spicy Baked Eggs And Kidney Beans


  • 3 tbsp olive oil

  • 200g – 7 Oz red onion chopped

  • 400g – 14.1 Oz kidney beans (washed)

  • 400g – 14.1 Oz tinned chopped tomatoes

  • 200g – 7 Oz Spinach

  • 4 eggs

  • Chopped fresh herbs (garnish)

  • Ground pepper and salt

  • 2 tbsp tomato puree

  • 1 tbsp honey

  • 2 tsp paprika

  • 1 tsp cumin

  • 2 tsp dried mixed herbs

  • 1 tbsp soy sauce

  • 1 tbsp white wine vinegar


  • pre-heat a shallow pan @low-mediuim heat add the onion season with salt and pepper cook until softening and translucent color
  • add paprika, cumin, herbs, soy sauce and vinegar cook for 2 minutes
  • add kidney beans, tomatoes, spinach, puree, and honey, salt and pepper to taste add some water bring to simmer
  • simmer for 5 minutes until starts to thicken, flatten out the mixture make small holes to place the eggs
  • cover with lid for soft-centered eggs
  • garnish with paprika herbs and drizzle of olive oil.
