3 tbsp olive oil
200g – 7 Oz red onion chopped
400g – 14.1 Oz kidney beans (washed)
400g – 14.1 Oz tinned chopped tomatoes
200g – 7 Oz Spinach
4 eggs
Chopped fresh herbs (garnish)
Ground pepper and salt
2 tbsp tomato puree
1 tbsp honey
2 tsp paprika
1 tsp cumin
2 tsp dried mixed herbs
1 tbsp soy sauce
1 tbsp white wine vinegar
Directions
- pre-heat a shallow pan @low-mediuim heat add the onion season with salt and pepper cook until softening and translucent color
- add paprika, cumin, herbs, soy sauce and vinegar cook for 2 minutes
- add kidney beans, tomatoes, spinach, puree, and honey, salt and pepper to taste add some water bring to simmer
- simmer for 5 minutes until starts to thicken, flatten out the mixture make small holes to place the eggs
- cover with lid for soft-centered eggs
- garnish with paprika herbs and drizzle of olive oil.
