  • 2 chicken fillets (diced)

  • 3 potatoes

  • 2 spring onions

  • 6 slices of ginger

  • 2 tbsp light soy

  • 1 tbsp oyster sauce

  • 4-5 tbsp tapioca startch

  • 1 tsp 13 spice seasoning

  • 1 tsp olive oil

  • tomatoe sauce

  • black pepper

Directions

  • boil the diced spuds for 1 to two minutes,
  • add some water to the spring onion and ginger and allow to marinate,
  • place the diced chicken in a bowl and add a tbsp of the spring onion and ginger juice,
  • add the oyster and soy sauce, add the 13 spice and black pepper,
  • add 1-2 tbsp startch and mix well, leave to stand for 20 minutes,
  • mix in the spuds with oil black pepper add more startch until fully covered,
  • place into individual trays cook in the oven for 25 minutes on the middle shelf @ 200c
  • remove and let cool before brushing on some tomato sauce.
