Lemon flavoured Lamb

Ingredients

  • 1/2 lamb leg – 1.175kg – 2.59lbs

  • 300g mushrooms – 1 carton

  • 2 onions chopped

  • 2 lemons – zest & juice

  • fresh thyme chopped

  • 8 cloves fresh garlic

  • 2 chicken stock cubes

  • splash of Worcester sauce

Directions

  • make small cuts into the leg and place some garlic
  • rub grated lemon zest all over the leg
  • place in oiled pan cover with foil and place in pre-heated oven 180c – 356f cook for 45min
  • add 2 chicken stock cubes into 1 pint of water
  • add water to pan with additional 1/2 to 1 pint of water
  • add onion, thyme, mushrooms and Worcester sauce
  • bring sauce to simmering heat, add lemon juice
  • remove leg from oven remove foil drain excess fat
  • add the sauce to the leg in the oven dish cook for a further 45min uncovered
  • occasionally basting the meat with the sauce
