Selecting the Best King Prawns
The foundation of any great prawn dish begins with quality seafood. Fresh prawns are ideal, boasting a sweet, oceanic aroma and firm texture. Look for prawns with translucent shells and a glossy sheen. If fresh options are unavailable, opt for high-quality frozen king prawns—just ensure they’re fully thawed before cooking.

Before cooking, devein the prawns to remove any grit, which can affect both texture and taste. Simply make a shallow incision along the back and gently pull out the dark vein using a knife or skewer. Removing the shell is optional, but leaving the tail on enhances both flavor and presentation.
Essential Ingredients for a Flavorful Garlic Sauce
Garlic is the star of the show, and choosing the right type makes all the difference. Fresh garlic cloves provide a robust flavor, while roasted garlic offers a milder, slightly sweet profile. For depth, balance the sauce with a combination of butter and olive oil—the butter lends richness, while olive oil prevents burning.

Seasoning is key. A pinch of sea salt enhances the natural sweetness of the prawns, while freshly cracked black pepper adds warmth. A splash of lemon juice brightens the sauce, cutting through the richness, and a dash of chili flakes can introduce a subtle heat for those who love a little kick.
Step-by-Step Cooking Process
Start by heating a generous drizzle of olive oil in a pan over medium-high heat. Once shimmering, add the prawns in a single layer, ensuring they have space to develop a golden sear. Cook for 1-2 minutes on each side until they turn opaque and lightly caramelized. Remove them promptly to avoid overcooking.

In the same pan, lower the heat and add finely minced garlic. Sauté until fragrant but not browned—garlic can turn bitter if overcooked. Stir in butter, allowing it to melt into the garlic, then add a splash of lemon juice and a bit of seafood or vegetable stock for extra depth. Let the sauce simmer briefly before returning the prawns to the pan, tossing them gently to coat.
Serving Suggestions & Pairings
King prawns in garlic sauce pair beautifully with a variety of sides. Crusty artisan bread is a fantastic choice, perfect for soaking up the luscious sauce. Alternatively, serve over al dente pasta or a bed of fluffy jasmine rice to transform it into a hearty meal.
For a well-rounded dining experience, consider beverage pairings. A crisp white wine, such as Sauvignon Blanc or Chardonnay, complements the dish’s buttery, garlicky notes. If you prefer non-alcoholic options, a chilled citrus-infused sparkling water provides a refreshing contrast.

Final Tips & Common Mistakes to Avoid
To ensure the best results, avoid overcooking your prawns—just a few extra seconds can turn them rubbery. The key is to cook them quickly over high heat and remove them the moment they turn pink.
When making the garlic sauce, take care not to burn the garlic, as it can overpower the dish with bitterness. Stir continuously and cook over low heat for maximum flavor development.

Lastly, don’t skimp on fresh ingredients. Fresh lemon juice, quality butter, and good olive oil make a noticeable difference in the final taste.
Cooking king prawns in garlic sauce is a rewarding experience, delivering a dish that is as impressive as it is delicious. With the right ingredients and techniques, you’ll have a restaurant-worthy meal ready to impress.
